Corn Fritters

Pan fried batter with sweet corn kernels....what's not to like?  This was a treat which my mother used to make as a side to steak on a Saturday. Since I can eat an entire batch myself,  my mother used to triple it and I dare say there were never leftovers, which is good because they don't keep well.

Ingredients

1 cup flour
1 tsp. salt
1 tsp. baking powder
2 medium sized cans of corn, strained
2 eggs
1/4 cup milk
1 tbsp of melted shortening (substitute: vegetable or canola oil)
vegetable, peanut or canola oil, for frying

Directions
Sift flour, salt and baking powder into a bowl.
Beat eggs with milk.
Add melted shortening and corn.
Combine wet and dry ingredients.
Lightly drop spoonfuls of batter into hot oil.
Fry until brown.
Drain on paper towel or brown bag.
