Recipe Friday: Corn Fritters

I suddenly got a craving for these on my commute home, so I figured I would use it as my weekly recipe. They are simple and delicious, and you can make them ahead and re-warm them in a hot oven.

This used to be a staple in our usually Saturday night steak dinner. My family is very routine with a lot of things, which is why I think I am very routine with my everyday life and I have a hard time being spontaneous and breaking a particular cycle. For the longest time, we stuck to a dinner routine, eating the same exact thing certain days of the week.
Friday: Pizza
Saturday: Steak
Sunday: Pasta, at 2pm, no later.
Tuesday: Chicken cutlets (random, right?)

So with our usually Saturday meal of steak, my dad would mix up a double batch of corn fritters and mom would cook them.

1 cup flour
1 tsp. salt
1 tsp. baking powder
2 medium sized cans of corn, strained
2 eggs
1/4 cup milk
1 tbsp of melted shortening (substitute: vegetable or canola oil)
vegetable, peanut or canola oil, for frying

Sift flour, salt and baking powder into a bowl. Beat eggs with milk. Add melted shortening and corn. Combine wet and dry ingredients. Lightly drop spoonfuls of batter into hot oil. Fry until brown. Drain on paper towel or brown bag. Enjoy!

I wish I could eat that right now! If you try them, let me know if you love them as much as I do!
