Recipe Saturday: Capelli d'angelo with Roasted Veg

Capelli d'angelo, literally angel hair, is an even thinner variant of capellini....and one of my all time favorite pastas. I can eat pounds of it...with pounds of parmesan, of course.

I created this recipe one day when I had leftover roasted veggies from steak and potatoes night. Roasted veggies are the best. They are full of flavor, and I usually over-roast them so they get super charred. The recipe is very simple and easy to make.

You'll need:

2 medium zucchinis, diced
1 pint of cherry or grape tomatoes
1 package of baby bella or crimini mushrooms, quartered
1lb of angel hair pasta
Olive oil
Salt, pepper and parmesan, to taste.

Pre-heat the oven to 450. Dice the zucchini into 1/2" pieces, and quarter the mushrooms. Throw the zucchini, mushrooms and tomatoes into a shallow roasting pan, add a little olive oil, to coat the veggies. Season with salt and pepper and stir. Place the pan on the lower rack of the oven, setting a timer for 30 minutes. After the time has passed, stir the veggies and roast until well charred.

In the meantime, cook the angel hair according to the package directions. Strain and place in a large bowl. Pour the veggies and drippings over the top of the pasta and finish with LOTS of parmesan cheese. Make it gooey!!

Enjoy!!!!

  1. Might seriously try this this weekend. I cooked spaghetti and meatballs for the first time ever all on my own this past Saturday and it was delicious! I put olive oil and garlic on the spaghetti and put grated parm in the meatballs... everyone loved them. I was so proud =)
